Experience Overview

 

You will join your host virtually for a guided experience by wine enthusiast Jackie Franklin. You will taste 3 red wine varietals paired with gourmet chocolates as well as enjoying an exceptional charcuterie spread.

All perishable items for this experience will be shipped as per your registration.

Topa Mountain Winery

Situated under the watchful eye of the Topa Mountain range in the Upper Ojai Valley, surrounded by ancient oaks and majestic redwoods. The winery showcases exceptional wines made from new varietal plantings to the Ojai region, such as Barbera, Tempranillo, Carmenere and Touriga Nacionale. Others have long thrived in the region, including Syrah, Grenache and Viognier.

 

All of their wine is produced using techniques designed to reveal the flavors inherent in each varietal, as developed by the unique climate and terroir of their vineyards. They are aged in a mix of old and new French oak barrels, then carefully monitored and bottled under strict standards.

Jackie is an Ojai native and loves the region dearly, whether exploring Los Padres National Forest or enjoying a day along the Ventura coast.

She is passionate about our region’s ability to produce local and environmentally sustainable wine.

 

She believes in a holistic philosophy to winemaking which starts with climate, and emphasize the importance of the vineyard, as well as wine’s relation to the food we love to grow, cook, and eat.

2016 Chief Peak Blend 

 

50% Syrah & 50% Grenache

raspberry jelly, red licorice, dried blueberry, and wild sage on the nose, with flavors of elderberry, fruit leather and black cherry. With silky, chewy tannins & a lively personality, this is a beautiful portrayal of varieties & region.

2016 Syrah

 

Santa Barbara County - dried berries, ash, tobacco leaf on the nose, with blackberry, currant, dark fruits, and layered tannin on the palate.

2016 Mourvèdre

Notes of cola, bing cherry, spices, and chocolate with flavors of raspberry, dried raspberry, dried cranberry, red fruit jam, and thin gripping tannin.

Wine Lover’s Cheese Collection

Includes:

  • Cabot Clothbound Cheddar - While Cabot's could at times be mistaken for an English clothbound, this big boy is an American original. Slightly tangier but still incredibly well-balanced with a nutty sweetness.

  • Manchego – Pick any word that one might use to describe cheese. Buttery? Nutty? Grassy? Rich? Yummy? All of these describe Manchego, and it's easy to see why this has been a bestseller at our shops for years.

  • Schnebelhorn – As delicious to eat as it is to say! Pronounced "Schneb-el-horn," this complex raw cow’s milk cheese is made in the Swiss Alps and named after the tallest mountain in the region. Schnebelhorn has plenty of deliciously pungent sharpness, wrapped up in a firm, creamy bite.

  • Black Lava Cashews (5 oz) – Award-winning snacks made the old fashioned way. Black Lava Cashews are dusted with Hawaiian Black Lava sea salt, which uses charcoal for an exceptional flavor and an exciting look.

  • Piave Vecchio – A younger, sweeter parm style—so uncomplicated and easy. Nutty, fruity and bold, this cheese has the perfect amount of crunch and delicious notes of pineapple. Pairs perfectly with red and white wines alike!

  • Mild Soppressata (8 oz) - Our Mild Soppressata is an Italian classic; rustic and savory. Our recipes and process stay true to traditional Italian salami & are produced with regional Italian spices and the old-world technique of slow air-curing for at least 45 days. Best with red wine, but surprisingly fun with a glass of bubbles too.

  • Mild Soppressata (8 oz) - Our Mild Soppressata is an Italian classic; rustic and savory. Our recipes and process stay true to traditional Italian salami & are produced with regional Italian spices and the old-world technique of slow air-curing for at least 45 days. Best with red wine, but surprisingly fun with a glass of bubbles too.

Legendary Cheese Collection (Vegetarian Option)

Includes:

  • Marcel Petite Comte – From the renowned Fort St. Antoine aging vault, these wheels are selected based on flavor, not on age or price, unlike most Comte imported into the U.S. Jason Hinds travels to the Fort up to 10 times a year to select wheels that will arrive at the Di Bruno Bros. counter at the peak of ripeness, when all of the beguiling flavors – hazelnuts, heavy cream, fried onions, spring berries, cut grass, wet earth and straw – start to come to life.

 

  • 1605 Manchego – Produced from manchega sheep raised on a diet of home-grown native grains, Finca Sierra de la Solana’s Manchego is one of the last PDO cheeses produced with a natural rind. This allows the cheese to breathe; the cut cheese has a clean aroma, smelling of hay and almond. While most industrial manchegos are one-note, 1605 Manchego sings with sweet juicy notes of pineapple and warm flavors of toasted brioche.

 

  • L’Amuse Gouda – Betty and Martin Koster have a deep connection with some of the finest Dutch opleggers (affineurs) in Holland, thanks to their magical cheese shop in Amsterdam, which was established in 1989. Betty exports a handful of expertly-aged cheese to the U.S., including one of our favorites, L’Amuse Gouda. L’Amuse has all of the characteristics of a great gouda: distinctive roasted hazelnut and burnt caramel flavor, with a velvety texture.

  • Cravero Parmigiano – Giorgio Cravero’s family has selected and aged Parmigiano Reggiano in Bra, Italy since 1855. The milk for our Parmigiano Reggiano, which Giorgio selects and ages for us, comes exclusively from the high fields (700 meters above sea level) of Benedello di Pavullo, where the grasses and flowers the cows feed on are very diverse. The cheesemaker makes only 8 wheels a day, yielding a cheese that represents the terroir of the region better than any other Parmigiano we’ve ever tasted. This is a dessert cheese, a snacking cheese and one to treasure – it is not a Parmigiano for grating!

  • Fig & Acacia Honey Jam (7.1 oz) - Use our jam to pair with cheese or as a glaze for roast pork or chicken, or as a delicious condiment for cakes, jelly rolls, tartlets & pies.

 

  • Sea Salt Crostini (7.04 oz) - The absolute perfect vessel for the cheese, meat, or dip of your choosing. Twice-baked for maximum crunch, with the perfect balance of olive oil and sea salt.

Conner Cherlan will perform a 30 minute virtual concert after the tasting.

With a blend of styles from Americana, to Indie/Folk, to Soul music, Conner Cherland’s voice compares with present day singers like Hozier, Ed Sheeran, and Shakey Graves. Combined with his live guitar looping, foot percussion, and carefully chosen lyrics, you’re likely to wonder how so many sounds can come from just one man.
